Besides Gemini & Claude, what other AI options are there?

Getting really tired of the voice updates along with the previous chats being deleted or mixed up with much older chats, so you can't go back to the information you needed in them. Want an AI that I'm in charge of. As in, if I choose a preferred voice, that's the voice I get, not what the developers think is best that week. The new voice actually annoys me, thus this post.
