5090 vs dual 5060 16g - why isnt everyone going dual?

I'm hoping you guys could help me here. Looking at the price of things I can get two 5060 16gb cards for about $1100 new giving me 32gb of vram and a 50 series GPU vs. some of these silly prices for the 5090. Is there a reason that this isn't the way to go? The price difference is just so big, am I missing something here?
