What industries seem “AI-proof” but are actually about to get/are getting disrupted?

Been talking to a friend about an article on how AI is revolutionizing the graphic design industry. He pushed back and said: “that’s not the issue. It’s that you could replace ‘graphic design’ with almost any industry and the same thing would be true.” That got me thinking - what are the industries that don’t seem like obvious targets for AI disruption… but actually are? Not things like coding or design (which are already clearly being affected), but unexpected ones - jobs or fields people assume are “safe,” yet AI is quietly making inroads or could realistically transform soon.
